On my way back from Austin I usually like to stop by the Czech Stop and get a kolache or two (…or three). I did the last time I was driving back but decided to do things a little differently this trip. Instead I got some cookies from the Collin Street Bakery. You may have heard of this bakery, they are well known for their fruit cakes.
But this was no fruit cake stop. Like I said, this was a cookie stop.
I went in there with my stomach growling (I don’t recommend going into tourist-y bakeries when hungry, my eyes were bigger than my stomach and it started to add up!) I ended up leaving there with a turkey and cheddar sandwich on multi grain (sounds good, right?) and some chocolate chip cookies, pecan crunch cookies, cherry ice box cookies, and date princess bars.
The experience itself wasn’t too enjoyable since the service was extremely slow and I was trying to get in and out quickly. It took about 7 minutes before someone would get my wrapped sandwich from behind the glass deli case, then I had to go to another counter to get the cookies (they had a LOT of cookies to choose from) and back to the deli area to check out, which took like another 7 minutes. There was plenty of staff there, they just always seemed to need to grab someone else to do the job.
I would have normally ate the sandwich in my parked car but the visit took a little too long and I needed to get back on the road. Plus it was wrapped in plastic and was a sandwich, easy to eat with one hand (unlike eating a taco while driving, that’s hard!) Took one bite and immediately spat it out. Wasabi? I peeled back the lettuce and yup, wasabi paste spicy dijon mustard. First off, what is wasabi doing in a bakery/deli, and secondly what is it doing on a turkey and cheddar on multigrain sandwich? It was okay though, I still snacked on the cheese and turkey and tomatoes.

Yes, I would like some cheese with this whine ;)
Enough complaining, lets talk about the cookies.
Cherry Ice Box Cookies, by far Kyle and I’s favorite. I want to try to recreate these soon. There were pieces of marashino cherries in the cookie. It tasted like a soft, sugar cookie with cherries. Simple, sweet, delicious.
Princess Date Bars, these were good. The crust was very sweet and crunchy, and had coconut in it which was unexpected but loved of course. The filling however wasn’t very chewy and moist like my Date Bar recipe. These were good though, don’t get me wrong. The next time I make date bars I will have to try out coconut in the crust.
Chocolate Chip Cookie, who doesn’t love a plain ‘ol chocolate chip cookie? It was sweet and soft, and the chocolate melted in your mouth which I liked. But sorry, but since I made those perfect chocolate chip cookies, my standards have gone up!
And lastly, Pecan Crunch Cookies. These were great. They were very nutty and had plenty of pecans in the cookie. I liked the sugar coating also.

P.S. I was contacted by someone at Collin Street Bakery shortly after posting this and I am looking forward to giving them another chance the next time I drive through Waco. That location has only been open 2 months and like anywhere, the kinks have to be worked out. Now if only I had some cherry ice box cookies!
