Doin what?

Foodbuzz 24, 24, 24, That’s What!

I have wanted to every month since I became a FP, but something was always happening on the day of the big meal. But this month worked for me and my proposal (obviously) worked for them.

In case you have been under a blog rock and don’t know what this event is, let me give you a quick briefing. 24 featured publishers from around the globe all feast (or whatever it is they proposed) within the same 24 hours and blog about it on the same day (and this is all possible due to Foodbuzz and Visa Signature).

So what did I propose? Paninis and Bellinis!!!

Why? Well besides the fact that is rhymes, paninis and bellinis are a perfect way to entertain on a summer evening.

Let’s dig in.

Roast Beef Panini – Sliced Roast Beef, Provolone Cheese, Caramelized Onions, Bacon and Horseradish Aioli on Sourdough Bread.

-This was Kyle’s special request. He loved this, I did too! All the flavors came together perfectly, the bacon and beef, the spicy horseradish, the sweet onions, the creamy cheese. Yum!

Grilled Chicken Panini – Grilled Chicken, Spinach, Swiss Cheese and Tomato Confit.

- Kyle and I used to make this often when we were catering (Jen, remember these from your bridal shower?) These are simple, great and the sweet tomato confit is what makes them stand out from any other chicken panini I have ever had.

and the Vegetarian Panini – Gala Apples, Spinach, Grilled Onions and Gorgonzola.

This one was for the vegetarians (and I did see some non vegetarians snacking on these too!) The apples stayed crisp and sweet and went well with the tangy Gorgonzola cheese.

Served on the side, Grilled Vegetable Crudite with a basil cream sauce. All the veggies are grilled and served cold. It’s great to see people snacking on these veggies, they are great for you and even the sauce is figure friendly. Move over chips and dip, we got a new healthier sheriff in town.

And of course, the Bellinis. Let’s just get this clear, I have never been served a g
ood bellini. Most places just make them wrong. They shouldn’t come out of a margarita machine and they shouldn’t‘ come from juice. They should be fresh pureed peaches topped with Champagne or Prosecco. (Ok, so I added a little peach schnapps, sue me!)


And what’s a meal without dessert? I made a carrot cake. I used to make this cake everyday at the restaurant I worked at, so after many tweaks this is by far my favorite carrot cake recipe. (Can’t be bad with a full pound of carrots grated into the batter!)

    Wow these all look amazing. Well done! Funny I mentioned Bellinis in my post today. Yours look fabulous and you are right that most places just don't make them the right way.

    I was lucky enough to try the cake and I am not exaggerating when I say that it is the best I have ever tasted. Seriously, I had no idea it could EVER be so good! My husband better finish it up or I have officially BLOWN my diet.

    OMG.. everything looks so amazing! Anything sandwiched between a panini tastes better :) I always serve grilled veggies at parties (considering more than 50% of my friends are vegetarian). Can't wait for the basil cream sauce recipe!
