I’ve never made a cookie sandwich until now…

…and by that I mean I have never slathered cream cheese frosting between two soft chocolate chip cookies and rolled it like a tire in sprinkles!! I don’t know why I waited until now… these are killer!


Now you can’t throw together any ‘ol cookie or frosting to make a killer cookie sandwich. There are rules and regulations you know.

Officially, the cookies needs to be soft and chewy. You need to be able to bite through the cookie sandwich and not have the top or bottom cookie crumble around the frosting. Crispy cookies just won’t work! I have a favorite chocolate chip cookie recipe, but I knew it wasn’t as soft and chewy as the cookies needed to be.

And the frosting can’t be too sweet either. Ever had one of those chocolate chip cookies cakes from the mall? The frosting is always headache inducing sweet. I decided to go with my cream cheese frosting recipe since its tangy, creamy and not overly sweet.

And lastly we need texture. In this case, chocolate chips, pecan bits and sprinkles give this cookie something you can bite into. You could always use a sugar cookie or snickerdoodle cookie and add texture to your frosting.

Soft Chocolate Chip Cookies
yield: 36 cookies

2 1/4 sticks Butter, room temperature
1 cup Brown Sugar
1/2 cup Powdered Sugar
2 Eggs
1 tsp Vanilla Extract
2 3/4 cup AP Flour
1 tsp Baking Soda
1/2 tsp Salt
1 1/2 cups Chocolate Chips
1/2 cups Pecan pieces

preheat oven to 375 degrees

1. Beat together butter and sugars until smooth. Add the eggs and vanilla and continue to beat until combined.
2. Sift together the flour, baking soda and salt and stir into the butter mixture. Add the chocolate chips and nuts and stir until just combined.
3. Drop rounded tablespoon fulls of the dough onto ungreased baking sheets about 2 inches apart. Bake for 10-12 minutes.
4. Allow to cool on baking sheet for 2 minutes before transferring to a wire rack.

To assemble slather at least 2 TBS of cream cheese frosting on the bottom of a cookie and smear to the edges. Place another cookie on top. Roll in sprinkles. Repeat.

On a platter these just yell out ‘grab me, enjoy me!‘ The sprinkles are eye catching and the cookies have that classic, soft, chocolate chip cookie look that we all drool over. I think these taste better a few hours after assembly. (Trust me, I tried one right after assembly and another one a few hours later.) I gave a few of these to my neighbor and he was excited to try them, I bet your neighbor would be too.

    I made my own version of these this summer…the cream cheese frosting is awesome isnt it?!?! I love your touch of the sprinkles! yum!

    This looks really good and I like that you can use the sprinkles then to decorate. I can imagine that you can make a variety of holiday appropriate cookies just by changing the sprinkles.
