How to make Killer Chocolate Chip Cookie Sandwiches

I’ve never made a cookie sandwich until now…

…and by that I mean I have never slathered cream cheese frosting between two soft chocolate chip cookies and rolled it like a tire in sprinkles!! I don’t know why I waited until now… these are killer!

Now you can’t throw together any ‘ol cookie or frosting to make a killer cookie sandwich. There are rules and regulations you know.

Officially, the cookies needs to be soft and chewy. You need to be able to bite through the cookie sandwich and not have the top or bottom cookie crumble around the frosting. Crispy cookies just won’t work! I have a favorite chocolate chip cookie recipe, but I knew it wasn’t as soft and chewy as the cookies needed to be.

And the frosting can’t be too sweet either. Ever had one of those chocolate chip cookies cakes from the mall? The frosting is always headache inducing sweet. I decided to go with my cream cheese frosting recipe since its tangy, creamy and not overly sweet.

And lastly we need texture. In this case, chocolate chips, pecan bits and sprinkles give this cookie something you can bite into. You could always use a sugar cookie or snickerdoodle cookie and add texture to your frosting.
(Now I’ve got you thinking of the possibilities, huh!)

Soft Chocolate Chip Cookies

This recipe makes one delicious treat with two kinds of cookies: chocolate chip and peanut butter. To make them, simply combine both ingredients. To prepare the cookies, start by matching their sizes and shapes. Pipe frosting on the bottom and middle of the first cookie, working outwards. Place the second cookie on top of the frosting, and give it a soft squish. When finished, store remaining cookies in an airtight container.

On a platter these just yell out ‘grab me, enjoy me!’ The sprinkles are eye catching and the cookies have that classic, soft, chocolate chip cookie look that we all drool over. I think these taste better a few hours after assembly. (Trust me, I tried one right after assembly and another one a few hours later.) I gave a few of these to my neighbor and he was excited to try them, I bet your neighbor would be too.

Ingredients

If you love a good chocolate chip cookie sandwich, you’re in luck! These delicious treats are easy to make, and the ingredients are relatively inexpensive. First, you’ll need chocolate chip cookies, which you can prepare according to the recipe. After the cookies cool, you’ll need to prepare the buttercream frosting. Follow the recipe to create a delicious and easy frosting. Next, spread the frosting on both cookies, starting from the center and working outward. Then, sandwich the two cookies together, giving them a gentle squish. Once they’re both cool, you can remove the cookie from the pan and store it in an airtight container until you’re ready to serve.

For chocolate chips, choose semi-sweet or dark-chocolate chips. If you’d prefer a milk or cream filling, you can use unsweetened baking chocolate. Coffee brings out the flavor of chocolate, and it can be substituted for half of the amount of sugar used in the recipe. Add two teaspoons of coffee to the batter. Once the dough is formed, add the chocolate chips and fold in gently to combine.

Baking time

When making these treats, a great way to reduce the time required to bake your cookies is to use a cookie scoop. It can help to make the sandwiches uniform in size and will take less time to cook. For the perfect sandwich, you should use a heaping tablespoon of batter, or two level teaspoons. Make sure to chill them before serving. These cookies are best served warm, but you can also store them in an airtight container for up to a week.

If you want to make the cookies ahead of time, you can use plastic wrap to store them in the fridge. You can also freeze the cookie dough in an airtight container for up to 8 hours. Then, when you want to serve them, you can thaw them in the refrigerator. This way, they won’t get soggy. Chocolate Chip Cookie Sandwich @ TotallyChefs

Chocolate Chip Cookie Sandwiches are a classic treat that combines two baked cookies and a scoop of ice cream. This combines the best of both worlds! First, bake two cookies one at a time, placing them about two inches apart on an ungreased baking sheet. Next, cover and refrigerate the remaining cookie dough. After the cookies are baked, remove them to a cooling rack to cool completely.

Refrigeration for Chocolate Chip Cookie Sandwicheas is very important for these treats. Once made, they need to be kept cold for a few hours before they are assembled. This can be a bit tedious, but it is well worth it for the deliciousness. However, it will give you a delicious treat! Make sure to keep them in the refrigerator for at least a couple of hours or overnight.

Freezing

You can prepare the ice cream sandwich by first making the cookies and then placing a small scoop of it in the center. Then top the cookie with another one, gently pressing and twisting. When the ice cream is hard, the sandwich will break apart and leak out. To prevent this from happening, you can soften the cookies separately and then freeze them. Alternatively, you can thaw them in the refrigerator.

Frozen Chocolate Chip Cookie Dough Cookies are made by mixing the cookies and Rada Cookie Dough Sweet Dip together. Then, mix in the cream cheese until evenly mixed.
