So it’s that time of the year. TX/OU weekend.

It’s when the crazy Oklahomans come down to Dallas for the Red River Shootout (a.k.a. when University of Texas plays Oklahoma University.) Close to 100,000 people attend the game at the ‘Cotton Bowl’ (which is located in Fair Park, remember when I went there recently for the State Fair?) which is just a few miles away from me. So I have had to deal with all the traffic. And let me tell you something, the people that come down from Oklahoma are ROWDY. Also, Texas fans wear burnt orange while the Oklahoma fans have on crimson red, so I knew whatever I posted today had to be orange in color. ..In honor of Texas’ victory!

I’m not sure about BBQ joints in your state, but here in Texas you can always get a baked and loaded potato where ever you go. It is a loaded baked potato with the normal toppings, expect it is also stuffed with BBQ meat. It’s good, really really good. Very comforting. I decided to do a spin on that except I used a sweet potato for its deep orange color, and I also used BBQ chicken.

  • Bake (45 minutes) or microwave (5 minutes) a sweet potato until tender. Let cool before cutting. Lay the potato down longways and cut the top piece of skin off and start to mash the potato with a fork. Add butter, salt, pepper, and a pinch of nutmeg and mash until the potato is creamy. Try not to break apart the skin.
  • Shred a cooked chicken breast with a fork and add to a hot saute pan. When hot add BBQ sauce. I added about 2 TBS of sauce for one shredded chicken breast.
  • Mash down the potato to make room for this chicken, and load the bad boy up!! Add cheese on top and either bake for 10 minutes, or broil for 5 minutes.
  • Top with sour cream, green onions/chives, and some more shredded cheddar. Enjoy!

Notes

This was so delicious, and a great way to get my BBQ fix without eating too unhealthy. The BBQ sauce I used was kind of sweet, which went great with the nutmeg in the sweet potato. And I don't need to explain how delicious sour cream, cheese and green onions are with a loaded baked potato either!
