As of right now I have stopped buying pre-packaged snacks. I used to always have nuts, crackers, chips and 100 calorie packs in the house, but not anymore. Even though it is a 100 calorie pack, I realized I was defeating the purpose by going back for 2, maybe 3 bags. And don’t get me started on almonds. I can not have almonds in the house and stop at 1 serving.

And that is my downfall. Snacking.

I have been focusing on my eating habits lately and came to this conclusion. I always start off my day healthy and end it unhealthy. I always have a healthy smoothie for breakfast and a nutritious lunch, but somewhere around 4pm the snack cravings start and I usually snack away my dinner appetite, which is not good.

I always look at recipes before heading to the grocery store and today I was specifically looking at healthy snack recipes that won’t spoil my appetite. I have seen so many recipes for baked kale chips, so I decided to grab a bunch of organic kale while at the store and make it for myself.

Woah. Wow. Wowwy Wow wow.

This stuff is GOOD. Better than good.
It’s amazing. I wish I made it sooner.

The chips are light as air and have a great, crispy crunch. I didn’t add much salt but I swear these tasted like crispy potato chips. With an earthier flavor.

Crispy Kale Chips

1 bunch Organic Kale
2 TBS Extra Virgin Olive Oil
1 tsp Vinegar, Apple Cider or Balsamic
1/2 – 1 tsp Salt, kosher or sea salt
preheat oven to 400 degrees

1. Rinse kale and pat dry with a paper towel. Cut off stems and tear leafs off of the rib. Throw away the center rib pieces and set aside.
2. In a large bowl whisk together oil, vinegar and salt and add the Kale. Gently toss.
3. Put parchment paper on two baking sheets and divide kale among them. Bake for 15-17 minutes until crispy.

It’s been one time, but I can already tell you that these kale chips are going to become a staple in my house. Even Kyle loved them, and he isn’t normally one for big, leafy greens.

In fact, these don’t taste as healthy as they actually are. Kale is one of the most nutritious foods you can eat for the least amount of calories. It is abundant in calcium, iron, vitamins A, C, and K, and has seven times the beta-carotene of broccoli! But the best part is that kale provides the same anticancer properties as other members of the cabbage family. Happy Snacking!

    I have been making them almost every night and we devour the entire pan. Have you ever used nutritional yeast? You can find it at Whole Foods and it has a cheesy + nutty flavor and is packed with protein – it is AMAZING on the kale!

    My mom is a raw foodist (vegan) and she LOVES and makes these kale chips all the time. I had never seen them. Guess I'll have to try them….you make them sound tasty. What do they taste like? I'm not big on greens either…but over the last 6 yrs I've gone from iceberg lettuce to romaine to spinach and now I do the spring mix (w/ even some bitter greens in there). So I think I'll like these.

    This looks like an interesting recipe; however, 2 tsp of salt = 4000 mg sodium or about twice the recommended daily allowance of sodium. Would be nice to see a low-sodium version of this recipe.

    Kale Chips are the current staple in my house these days! I have never tried adding vinegar though, great idea! I have tried all different spices, and actually prefer plain old salt and pepper the best.

    I absolutely love kale chips and can't get enough of them! Ryan loves to eat them plain, but I go crazy with the ketchup (which may defeat the purpose…but better than fries, right? ;))

    Noelle – I am quite sure that baking the kale for 15 minutes does get rid of some of the nutritional value. However when compared to your normal snack, they are still 10x better for you!

    I've tried kale chips too, and I agree, they are so surprisingly great! I haven't tried them with vinegar, but I tried sprinkling some red pepper flakes, which added an awesome kick! It tastes almost like seaweed, but not. So hard to describe, but definitely delicious!

    Noelle,

    Baking will get rid of a little of the nutritional value, but not all of it. Furthermore, your body can't process some of the nutrients in the raw form and cooking food actually means you can process it.

    These look interesting, I'm not sure Kale is available here though, and I must admit when it comes to snacking I want a good old fashioned snack. I'm all about diversity and healthiness in your meals, but I kinda draw the line at snacks! :)

    Aren't kale chips the best? It's like – you SHOULD feel guilty because they are incredible, but then you don't have to . Love that.

    Thanks for posting this. I've been wanting to try these for awhile but I keep forgetting.

    They sell them premade at my health food/grocery store but I have a feeling they would be way better homemade and fresh.

    I made these today and they are definitely pretty decent! I think for my personal tastes even 1 tsp of salt is way too much so next time I'm just gonna add a little, but other than that, awesome. I bet these would be good with other powdered flavorings too.

    I just made these not too long ago. Aren’t they delish? I couldn’t stop eating them. Your finished product looks a lot more appetizing than mine, though. And I like the use of vinegar…I’ll have to try that next time. Thanks!

    Try using Mrs.Dash in place of salt, for those of you on low sodium diets. Mrs.Dash is now available in many different flavours.
