I thought about coloring some real eggs, but realized that a decorated hard boiled egg is somewhat pointless, and somewhat messy. Pretty, but messy. So instead I made these Rice Crispies Easter Eggs. I think I made the right choice.

The sweeter choice.
I shouldn’t even have to say it, but of course I didn’t come up the idea of rice crispies treats. Whoever did is a genius. But I have been enjoying them, and making them, my whole life. The crispy cereal, the gooey marshmallow, and in this case, the chocolate covered sunflower seeds. You could replace the sunflower seeds with mini M&Ms, or use nothing at all. I just thought the little splash of color made them more fun and Easter like!

Rice Crispy Easter Eggs

  • Mix with wooden spoon until rice crispies are completely coated. Add chocolate covered sunflower seeds and mix. Let cool for a few minutes.
  • Divide treats into 32-36 individual portions, then roll into balls, then into egg shapes.

Variations:

  • Peanut Butter: Add 1/2 cup peanut butter (crunchy or smooth) to the butter and marshmallow mixture after it has been melted, and mix in until smooth. Make the rest as normal, once the eggs are formed let rest at least 30 minutes.
  • Chocolate: Use cocoa crispies and follow recipe as normal.
