When I sent the email to my fellow local food bloggers that I would be having a potluck, I set the theme on Spring. It seemed an obvious choice since the flowers are blooming, the trees are green (the allergies are in full effect) and the produce in the store is fresh.

I was shopping the day before the potluck for last minute things and knew two things for certain.

One, I wanted pink gerbera daisies. And two, I was craving old school pea salad like it was going out of style.

Old School Pea Salad
yield: 10 servings

1 lb Peas, fresh or frozen
1/2 Red Onion, small dice
1 cup Cheddar (I used white and sharp), cubed
3 slices Bacon, cooked and crumbled
2/3 cup Mayonnaise
1/3 cup Sour Cream
Pinch Cayenne
Salt and Pepper, to taste

1. Combine all ingredients.

I just love pea salad. My Mom used to make it all the time and I haven’t had it in years.  It is creamy but the peas add a slight crisp. I like to make it at least a day ahead of time so the flavor of the red onion tones down a bit and the flavors marinate together. And I make sure to pull it out of the fridge at least an hour before serving. It is better closer to room temperature than cold. Don’t ask me why, just is.

Don’t ask me why Gerbera Daisy’s are beautiful. They just are.

    This looks gorgeous, I’m going to give it a go today. We don’t have cheddar in France so I’m going to try Comte, which has a nutty flavour.

    This looks AMAZING. All my favorite parts of a seven-layer salad w/ out all that pesky lettuce. I would probably add hard-boiled eggs b/c I love the bacon-pea-egg combo. So yum and simple. Good recipe:)

    Wonderful salad!!! I’m going to give it a try today for lunch, it’s too hot for cooking something too elaborated, this seems to be very fresh and light:) Compliments for your side, it’s really beautiful!
