I love Sundays. It’s the day that I can do whatever the heck I want, whenever I want, dressed in whatever I want. If I stay in my pajamas all day, that’s okay. It’s Sunday. And if Kyle and I watch five episodes of Dexter back to back, that’s okay too. It’s Sunday.

And if we decide to eat Peanut Butter Coffee Cake for breakfast, for an afternoon snack with coffee, and for dessert, well I think that is something you can do on any day of the week, especially on Sunday.

Anytime I am low on baking ingredients I always start to think about peanut butter recipes since it’s something I usually always have on hand. It was Sunday morning and we were wrapping up season two of Dexter (any Dexter fans in the house?) and I decided to bake something for breakfast with peanut butter. Peanut Butter pancakes sounded like a good idea to me but Kyle said that sounded too sweet. He wanted a mellow peanut butter flavor to compliment his dark roast coffee. Wait, did you say coffee?

Peanut Butter Coffee Cake it is.

What a pleasant aroma to fill the house on a Sunday morning!
French pressed coffee and rich peanut butter. Delightful.

Peanut Butter Coffee Cake with Crunchy Oats
yield: 13 x 9 x 2 pan

2 1/2 cup AP Flour
2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Baking Soda
1/2 cup Butter
3/4 cup Peanut Butter
1 1/2 cup Brown Sugar
2 Eggs
1 cup Milk
1 cup Sugar
1 cup Rolled Oats (not instant)

preheat oven to 375 degrees

1. In a bowl whisk together flour, baking powder, salt and baking soda. Set aside.
2. In another large bowl cream together butter and peanut butter. Slowly beat in brown sugar. Add eggs, 1 at a time, beating until fluffy.
3. Add flour mixture alternately with milk to the creamed mixture, beating after each addition.
4. Spread batter in a greased 13x9x2 baking pan. Top with oats and sugar mixture. Bake for 30 minutes or until toothpick comes out clean. Cool completely before cutting. Top with powdered sugar, optional.

The thing I love about coffee cakes is that they are usually quick to mix together, quick to bake….
…..and quick to be consumed!

This coffee cake is a winner! The cake is fluffy yet dense. The peanut butter flavor shines through but the cake is still smooth like butter. I knew the cake would need some sort of texture, and the crispy oats provide just that. All in all, this coffee cake is just perfect for a lazy Sunday. Or any day!

    Ah, so this is the peanut butter coffee cake you tweeted about this morning! Looks even tastier than I imagined.

    Where are you in Dexter? Isn’t that the most addicting show ever? I watched it several episodes of it at a time also, like you. I was so sad when I caught up, ha ha.

    I just finished season 2, so Doakes and Lila are no longer a problem ;) Trying to slowly catch up before the new seaosn, but I don’t want to be caught up. I want there to be enough Dexter episodes to last forever!

    Danielle, you could totally make this bread with almond butter. If it were me, I would remove the oil from the jar that usually rises to the top (and reserve) and try to use more of the actual almond butter. Let me know how it tastes!

    I’ve been known to eat chocolate cake for breakfast, lunch and dinner on a Sunday. In my defence it was the day after my birthday party and I was horribly hungover. I knew not what I was doing, I swear!

    Tried it and the cake part was fine but maybe I did something wrong with the topping? I combined one cup of sugar and one cup of oats and then sprinkled it over the top of the batter prior to baking…Nothing really happened to the topping it was just 2 cups of really loose sugar and oats on top of the baked cake. It didn’t melt in or adhere or anything…did I do something wrong? If I did, I will try again… thanks!

    Susan, oh no! The only reason I could see that happening is that the topping wasn’t gently pressed into the batter. Next time I would use the back of your hand or a spoon to press the sugar and oats into the batter. Also make sure the cake is in the most warm position in your oven.

    The cake looks delicious. I wanted to bake it today, but then noticed your recipe does refer to the coffee anywhere.

    Jackie, coffee cake does not actually have coffee in it. Coffee cake is a cake meant to be enjoyed with coffee. They are typically single layer cakes or rectangular loafs. Sorry for confusion.

    I am definitely making this cake. Also, just finished season 5 Dexter – I watched the whole thing over 2 days, as must be done with that show. No other way of watching it!
