My favorite Summer recipes… from my site that is!
Oh, don’t give me that look. I know what you are thinking. Where have you been all week Natalie? No seriously, it’s been a week. The longest hiatus I have ever taken from my blog has been 3 or 4 days. This has been tough, but I have one word. Midterms.
I do feel, however, that I am getting a better grasp of my time. I finally wrote out a real schedule that I plan to abide to. Certain nights will be dedicated to homework. Some nights will be dedicated to blogging. And some nights will of course be dedicated to vampires.
This week I thought I would show you my favorite summer recipes. I have been wanting to do a post like this for a while, and why not today. On the 14th day with temperatures over 100 degrees in Dallas. We are hot and grumpy around here. I hear next week will be in the high 90s and I can’t wait. Did I just say that? This heat is getting to my head. I never thought I would look forward to the high 90s.

Even though the temperatures are high, I still like to get together with my friends and family when I can. And getting together with friends and family means food. And with this heat, it also means icy cold beer. These stuffed jalapeño peppers go great with beer, and with only 15 minutes baking time, your kitchen shouldn’t get too hot.

These are just genius, if I say so myself. Everyone loves a frito pie, though the meal can be a bit too filling in the summer. So why not make a mini version that you can pick up with your hand! I introduce to you, frito pie bites. You can even change up the fillings, I have a tex-mex version also.

Though I only wrote about this just a few months ago in the spring, it is definitely a summer favorite.

I drink a lot of iced coffee in the summer. I brew the coffee double strength, and then cool with ice, that way the cooled coffee is normal strength and not watered down. Have I ever told you I worked at Starbucks for two years?

Watermelon sorbet is what summer is all about. Even though I dislike watermelon, I love it in sorbet form!

And lastly, a frozen lemonade pie with a quick strawberry sauce. This is a great summer pie when you are hosting at home (since it can’t travel). The pie isn’t overly tart, or sweet either. Perfect!
