    Soup Slow Cooker Calphalon 150

    I’ve had a lot of drafts, but not many published blog posts in the last two weeks. Remember the posts during snowpocolypse? The past two weeks have catch up at school, which has led to many meals on the go. I have been taking plenty of pictures for my classes though, and a post with new pictures will come shortly.

    Last week, Calphalon graciously sent me one of their new digital 7qt slow cookers to try out (in exchange for an original recipe), and though my time has been limited, I still agreed. After all, isn’t that one of the best thing about slow cookers?     Jumbalaya - 150

    This jambalaya is made with vegetable, no sausage, so it’s vegetarian! I’ve never liked sausage, ever. Something about the texture. Then I went to culinary school and had to make sausage, all different kinds. Grinding the meats wasn’t so bad, I realized it wasn’t that gross. Until we pulled out the casings that the sausage goes into. I WILL NEVER EAT SAUSAGE AGAIN. (yes I know there are casing-free and plastic casing kinds, don’t hassle me, I dont like it!)     Beans Burritos - 150

    I love burritos. My friends and coworkers love burritos. I live in Texas so everyone around me loves burritos. And since I live in Texas, you can practically buy a burrito on every corner.

    But here’s the problem. Those burritos are full of unnecessary calories, fat, sodium and cellulite. So I decided to make my own, and fill them with grilled vegetables and beans. I individually wrapped a few, so the past few days when I have been hungry for a light lunch or snack I can unwrap one, warm it up, and have myself a healthy burrito! Read More | Comments

    Dinner tonight was awesome. Dinner the past five nights has been awesome. Dinner the past five nights has basically been the same, and I can’t get enough! While trying to eat a bit better, I have made sure to keep a rainbow of vegetables in my fridge at all times, which is why this one simple meal contains garlic, red onions, sweet potatoes, broccoli, zucchini, spinach, mushrooms and green bell peppers. If this doesn’t meet your daily vegetable requirement, I don’t know what will!

    School starts again tomorrow, and I am having mixed feelings about going back. Of course I am excited about going back, and I am looking forward to learning more. I am taking an advanced lighting class as well as a portrait photography class (so you may see some head shots on here soon). On the other hand, I have a great routine going right now of walking the dog a few miles, working out, and cooking all of our meals from scratch. My waistline is benefiting from this new routine!     This is my new favorite Lemonade recipe. It’s so good and tastes like it is full of sugar and sunshine. This really isn’t a recipe as it involves 3 ingredients, but more or less introducing you to one of my new favorite sugar replacements. I could drink 10 glasses a day in the summer of fresh, sweet lemonade, so this version is perfect for me as it has no calories.

    I told you in the Vegan Energy Bar post that I received some samples of different kinds of stevia products from NuNaturals. I used the baking blend in the bars, and this time I am using the white stevia powder. Read More | Comments

    Do not adjust your monitors, you are on the right food blog. That’s right, this post is vegan. The blog that is home of the candy bar cheesecake has gone vegan and healthy. Well, for one post at least. You see, I have been feeling kind of uninspired in the kitchen lately. Sure, there are so many things I want to make but then that’s it. I look at the recipe, I bake it, I eat it, I photograph it, I eat it, I blog about it while eating it, then that’s it (well, then we finish eating it).

    I think what I have been missing is the feeling of being challenged. Where you go in the kitchen and rather than easily go through the motions, you read the recipe instructions and say ‘Wait, this actually works?’ or ‘What in the world am I cooking?’ And if there is one thing I know absolutly nothing about, it’s vegan baking.     Fresh Corn Quiche - 150 px square

    I am not fancy. I didn’t go to etiquette school, I don’t wear shoes with red soles, I would rather spend money on fancy chocolate than fancy makeup, and I don’t eat quiche. Quiche has always seemed like the dish you would find at a fancy, stuffy brunch that people named Benedict, Girtrude or Bunny go to.
    (I apologize if your name is either Benedict, Girtrude or Bunny, I’m sure you’re pleasant.)

    So the other day I had some leftover pie dough and decided to somehow use it, for a late breakfast Kyle and I were to enjoy on a lazy Sunday. I had crust. I had corn. and I had cheese. So I thought I would make some sort of egg-cream-corn filling and top with plenty of cheese, with a flaky crust on the bottom and up the sides. I snooped around a bit on the internet and realized….
