    This jambalaya is made with vegetable, no sausage, so it’s vegetarian! I’ve never liked sausage, ever. Something about the texture. Then I went to culinary school and had to make sausage, all different kinds. Grinding the meats wasn’t so bad, I realized it wasn’t that gross.     Beans Burritos - 150

    I love burritos. My friends and coworkers love burritos. I live in Texas so everyone around me loves burritos. And since I live in Texas, you can practically buy a burrito on every corner.

    But here’s the problem. Those burritos are full of unnecessary calories, fat, sodium and cellulite. So I decided to make my own, and fill them with grilled vegetables and beans.     Dinner tonight was awesome. Dinner the past five nights has been awesome. Dinner the past five nights has basically been the same, and I can’t get enough! While trying to eat a bit better, I have made sure to keep a rainbow of vegetables in my fridge at all times, which is why this one simple meal contains garlic, red onions, sweet potatoes, broccoli, zucchini, spinach, mushrooms and green bell peppers. If this doesn’t meet your daily vegetable requirement, I don’t know what will!

    School starts again tomorrow, and I am having mixed feelings about going back. Of course I am excited about going back, and I am looking forward to learning more. I am taking an advanced lighting class as well as a portrait photography class (so you may see some head shots on here soon). On the other hand, I have a great routine going right now of walking the dog a few miles, working out, and cooking all of our meals from scratch. My waistline is benefiting from this new routine!     I am not fancy. I didn’t go to etiquette school, I don’t wear shoes with red soles, I would rather spend money on fancy chocolate than fancy makeup, and I don’t eat quiche. Quiche has always seemed like the dish you would find at a fancy, stuffy brunch that people named Benedict, Girtrude or Bunny go to.

    So the other day I had some leftover pie dough and decided to somehow use it, for a late breakfast Kyle and I were to enjoy on a lazy Sunday. I had crust. I had corn. and I had cheese.     Being the founder, head of recipe development, styling and photography, and author of this blog (can I just go ahead and call myself a CEO?) I decided to have a meeting. With myself. I asked myself  ’Self, what else can I do on my blog? What other features can I add to make this site better for the readers?’

    I had a few ideas, and the first one to come into action will be a complete ingredient list. What do I mean by that? Well, I am putting together an extensive list of the ingredients I use. I realized that the question I am most commonly asked is ‘What is AP Flour?’ Really? The idea of someone not knowing what AP Flour is blows my mind. But I have to realize not everyone went to culinary school. Not everyone grew up with a Mom that cooks better than some chefs (it’s totally true). And some people are just now learning how to cook.     If there is one thing I don’t understand, it’s super unhealthy mashed potatoes. I find it unnecessary. Don’t get me wrong. It’s good and delicious. But so is this recipe, which has at least half the calories and fat. And trust me, I like to really stretch my daily calories and make every single one count.     Not even less than 24 hours before I made this stuffed spud, I asked Kyle what he thought about the idea. I said something like ‘Hey how does this sound, a cheesy broccoli stuffed potato?‘ and his reply was something like this ‘Eh, I don’t think so..
    What I envisioned in my head is exactly how it turned out. Creamy mashed potato, gooey cheese and tender broccoli. It came together perfectly in my head, and perfectly on the plate. I’m sure in his head though, he was imagining something extremely healthy, full of broccoli, and lacking in flavor. Well, he was right about two of those points. It is mostly healthy, and it is full of broccoli, but this twice baked potato sure isn’t lacking in flavor.

    Why is it that food we cook in the Fall tends to smell better than food we cook at any other time of the year?

    Fall has just begun, but those peanut butter pumpkin brownies smelled so scrumptious two days ago and the butternut squash I roasted today smelled so freakin‘ fantastic. The smell even woke Kyle up, but in a good way. He walked out of the bedroom with messy hair, sheet marks on his body and said ‘what’s that smell?

    and I said ‘It’s your dinner.
