    Every 11 weeks my routine completely changes as that is when my school schedule changes. I have been spoiled the past few years and have been able to sleep in at least four days out of the week. But this go around I am taking mainly morning classes so I am having to catch up on my sleep on the weekends, like a normal person. And trust me, this is the last time I take morning classes. Night classes seem to be more relaxed, nor do I have to wake up to an alarm as often. But one thing that doesn’t change when the rest of my schedule does, is Sunday night dinner.     Pesto Chicken Sandwich

    If I can grow one thing, it’s basil. And… that’s about it. I have tried cilantro but it always dies. I have heard that it is hard to grow in the extreme Texas sun, is this true green thumbs? My thyme died. My chives died a slowly painful death. And let’s not even talk about the rosemary. I basically have an herb cemetery.

    But my basil thrives. I planted a small little plant with a few leaves on it a few months ago and now I have so much basil I don’t know what to do with it. Well, I know exactly what to do with it. And that’s make pesto. Fresh, delicious, tangy, smooth pesto. It is hard to describe the flavor of pesto if you have never had it, but if you use fresh basil it will be something you will likely get addicted to. Read More | Comments

    It’s quite the title, it’s quite the dish.

    The idea for this meal just sort of came to me. Kyle had a few pals over and they were… what else? Playing Xbox. I had plenty of jalapeños in the fridge that needed to be used and decided to make a batch of my stuffed jalapeño peppers. Instead of adding bacon to the cream cheese though I wrapped the jalapeños in bacon. I can do that when making food for boys because boys love bacon.

    I don’t know a single person that doesn’t enjoy a nice, crisp Caesar salad. Whether you enjoy a dressing rich in anchovies, or you prefer the opposite, theres nothing not to like about fresh lettuce, tomato, shaved Parmesan, croutons and Caesar dressing. Occasionally there are other things added, but that’s the jist of a Caesar salad. This however, is not a Caesar salad recipe. It’s something better that that.

    I’ll be honest, I have never had a pasta salad I enjoyed. No matter the dressing , it always tastes dry or chewy. But this pasta salad is just right. The addition of crunchy salad and croutons add a nice texture, along with the chicken in the homemade, rich (low fat and made with tofu) Caesar dressing.     I just love cooking dinner for friends. It is one of my favorite things to do, and if I had an endless budget I would do it every night. Though most of the time, I am simply cooking for one. Kyle is a cook in a fancy-schmancy restaurant downtown, so Monday through Saturday he is cooking for others while I cook for myself.

    This sound unfortunate but it actually works for us. I get to cook a healthy meal for me (or for a friend and myself) and I usually throw together something for him as well. He gets home late and his dinner time is usually around 1am, and that is when he heats up his food. He may be a chef but he has no problem eating a frozen pizza for dinner. He is a guy after all.     Brrr Baby, it’s cold outside!
    I need somethin‘ spicy to warm me up.
    Dallas set two records yesterday. The first record set was the amount of snow fall we had. There was more snow than ever recorded in Dallas history! It was snowing when I woke up and was snowing as I went to sleep. The record was a little over 7 inches, and some places got around 12 inches. Please take note that I did not enjoy the snow one bit. It caused my electricity to go off for a few hours, it caused my feet to get cold and wet, it caused my tires to spin and it caused a helluva lot of traffic. Read More | Comments

    Have you noticed that food bloggers can over complicate recipes? Sometimes there are just too many flavors going on in one thing. Hey, I am guilty of it too. But, that is how I cook sometimes. I will throw in a dash of this, a sprinkle of that and when it’s time to re-write the recipe I realize it looks like a lot of work.

    Sometimes I just need to stop trying to create the most unique and fabulous dish, and trust the family recipes. After all, they wouldn’t survive the generations if they weren’t delicious. I work with a great gal named Darla (which is such a cute name, in my opinion) and she showed me her Mom’s recipe for Polynesian Chicken. I had all the ingredients on hand and it looked really tasty.     I have been eating healthy meals and last week I started going back to the gym.

    It’s frustrating to not be able to jog on the treadmill, and especially outside on pavement. My left ankle is doing much better, but I still can’t bounce on it. I have been using the stationary bikes, walking and occasionally the elliptical machine (though I really dislike the elliptical, it never feels like I am working out.)     So it’s that time of the year. TX/OU weekend.

    It’s when the crazy Oklahomans come down to Dallas for the Red River Shootout (a.k.a. when University of Texas plays Oklahoma University.) Close to 100,000 people attend the game at the ‘Cotton Bowl’ (which is located in Fair Park, remember when I went there recently for the State Fair?) which is just a few miles away from me. So I have had to deal with all the traffic. And let me tell you something, the people that come down from Oklahoma are ROWDY. Also, Texas fans wear burnt orange while the Oklahoma fans have on crimson red, so I knew whatever I posted today had to be orange in color. ..In honor of Texas’ victory! Read More | Comments
