    Trust me, I know it sounds odd. In fact, when I tweeted that I would be making this salsa I got mixed replies. Some said that honestly, it just sounded funny.

    Well can I be honest? This salsa is simply delicious. It’s not what you think… it’s better. It’s your standard chunky salsa with tomatoes, onions, jalapeños, lime juice and more, but sweetened with the addition of fresh, sweet strawberries. It works, and it works well.     I used to eat chicken fried steak every week. The sad thing is, this is when I was in high school. Obviously the patties were frozen, super unhealthy and sometimes if I could snag some extra lunch money, I would eat two! Oh.. the healthy diet of an American teenager.

    I don’t know a single person that doesn’t enjoy a nice, crisp Caesar salad. Whether you enjoy a dressing rich in anchovies, or you prefer the opposite, theres nothing not to like about fresh lettuce, tomato, shaved Parmesan, croutons and Caesar dressing. Occasionally there are other things added, but that’s the jist of a Caesar salad. This however, is not a Caesar salad recipe. It’s something better that that.

    I’ll be honest, I have never had a pasta salad I enjoyed. No matter the dressing , it always tastes dry or chewy. But this pasta salad is just right. The addition of crunchy salad and croutons add a nice texture, along with the chicken in the homemade, rich (low fat and made with tofu) Caesar dressing.     It’s Hatch Chile Festival time at Central Market! That means when you go to the store this weekend, you will open your car door and immediately smell hatch chiles roasting. I swear you can taste the heat, just from the smell.

    Buy in bulk, freeze, and you have hatch chiles year round.

    (Sorry to make some of ya’ll jealous, but Central Market is a Texas store! There are Hatch Chile Festivals all over the country though, google it!) Read More | Comments
