Fish Tacos - 150 px square

Fish Tacos. Delicious, fresh, light and satisfying fish tacos. How I love thee. There are three parts to a good fish taco. Bright seasonal toppings, the batter for your fish, and of course the fish itself.

However unlike most recipes you may see online for fish tacos, I believe the toppings are more important than the fish you use. Sure, I would never use tilapia so it is some what important, but for fish tacos you really want to find the best toppings you can. Perfectly ripe avocados, juicy limes, crisp cabbage and of course the most colorful and fresh pico de gallo you can make. Read More | Comments

    Cioppino - 150px Square

I went to London the summer after I graduated high school, and something someone said to me has always stuck in my head. It’s nothing profound or brilliant, it was just simply stated to me and is true. I was talking with a Londoner who asked me if anyone had brought up the weather. I thought it was an odd question, rather than asking me about the weather he asked if anyone else had asked about the weather. But I thought about it and realized yes, almost everyone had mentioned the weather when finding out I was a tourist. Then he said ‘people love to talk about the weather, as if they were the first person to notice.

It’s simple. Its kind of catty, and it sounded ultra sophisticated with the English accent. But anytime I have an urge to make small talk about the weather I hear that in my head. And I realize, chit chat about the weather is actually kind of bland. Kind of boring.

Fish Sandwich - 150 px square

There are a few ingredients Kyle hates so much that I choose not to eat them when he is around. He will complain so much that whatever I am eating will no longer be enjoyable. Has anyone had shrimp chips from the Asian section at your grocery store? I love them, he hates them. But the worse is packaged tuna. He absolutely hates tuna and tuna salad.

I like tuna salad when I make it at home. Its unbelievable how high calorie tuna salad sandwiches are at places like Subway because of all the mayo they add. But really tuna salad made my way is low in calorie and very high in protein, its the perfect after workout sandwich.

Here is a delicious and healthy lunch I threw together, obviously while Kyle was at work! Read More | Comments
