    So I had a conversation with bacon the other day (just go along with it). Bacon told me it’s tired of being paired with chocolate. Yes, its tasty, but there are only so many ways you can dip bacon in chocolate. And only so many ways to incorporate bacon in a dessert. Bacon told me that it is one of the best ingredients ever (duh) and can add a certain smoky, salty flavor to everything you add it to.     Pesto Chicken Sandwich

    If I can grow one thing, it’s basil. And… that’s about it. I have tried cilantro but it always dies. I have heard that it is hard to grow in the extreme Texas sun, is this true green thumbs? My thyme died. My chives died a slowly painful death. And let’s not even talk about the rosemary. I basically have an herb cemetery.

    But my basil thrives. I planted a small little plant with a few leaves on it a few months ago and now I have so much basil I don’t know what to do with it. Well, I know exactly what to do with it. And that’s make pesto. Fresh, delicious, tangy, smooth pesto. It is hard to describe the flavor of pesto if you have never had it, but if you use fresh basil it will be something you will likely get addicted to. Read More | Comments

    I don’t know a single person that doesn’t enjoy a nice, crisp Caesar salad. Whether you enjoy a dressing rich in anchovies, or you prefer the opposite, theres nothing not to like about fresh lettuce, tomato, shaved Parmesan, croutons and Caesar dressing. Occasionally there are other things added, but that’s the jist of a Caesar salad. This however, is not a Caesar salad recipe. It’s something better that that.

    I’ll be honest, I have never had a pasta salad I enjoyed. No matter the dressing , it always tastes dry or chewy. But this pasta salad is just right. The addition of crunchy salad and croutons add a nice texture, along with the chicken in the homemade, rich (low fat and made with tofu) Caesar dressing.     I really like instant gratification. It’s a big motivator for me. If I can’t do something, I want to know why, and I want how, then I want to know when I can. I think this factor has helped me in my picture taking. When I see a picture and don’t understand how someone took it, I instantly start to read a manual or look online. I also tend to upload pictures to twitpic before blogging about them, just because I want someone to tell me yum, or looks good!

    I had big plans today.

    I wanted to go to the mall and spend Christmas money (by the way, I hope everyone had a great Christmas!) Then I wanted to go to Target and use a gift card on a really cute dress or something. Maybe some earrings. Then I needed to return a few fugly undesirable Christmas presents I received.

    In between all that I planned on getting a latte or cappuccino, depending on my mood. Maybe a muffin also.

    But if I was going to be gone from home for a few hours then I thought I ought to take Holly for a walk. Afterall, shes an Aussie and they need to be walked everyday. An energetic dog cooped up in an apartment = a destructive dog. Read More | Comments

    Do you have any memories that make you instantly think of food? This may sound weird, but anytime I hear Selena’s song ‘Dreaming of You‘ I can almost smell waffles, bacon and cigarettes.

    Ok I’ll explain: I used to go to the Waffle House with my dad every morning. Four quarters in the jukebox gave me 6 songs and I always played Selena. This was 1994 after all, and I live in Texas. Selena was major. Just the sound of that song has my mouth salivating, thinking of the double order of hash browns and plain burger I ate every morning for breakfast (no joke). Read More | Comments

    I like to have grilled peppers on hand at all times. They can be thrown in salads, sandwiches and snacks (like some hummus topped with grilled red bell pepper, yum!) And anytime I grill, I grill a lot at once. Just to have some different things on hand during the week. I had some left over shrimp, scallions, a few mushrooms and two peppers to grill.
