    These past two days have been awesome. Tuesdays are usually my long days with work all day and school all night, but we got a snow day! There was some ice, an inch (if that) of snow, but we Texans can not handle driving on any sort of snow, slush, ice, etc. So we freak out and close up shop. Fine with me ! Work was closed and school was cancelled, and last night was the coldest night DFW has seen in 15 years. So guess what? Everything is closed today too!

    Yes, another chocolate chip cookie recipe. As if the internet doesn’t have enough. When googling ‘Chocolate Chip Cookie’ there are 1,320,000 results. So how do you decide which recipe to make? Do you have a standard, never changing chocolate chip cookie recipe? Or do you like trying a new recipe every time? My chocolate chip cookie making ways differ. Usually, I prefer this recipe here. You melt the butter and let the sugar melt in it, which creates an absoluely perfect cookie… seriously.

    But this certain day that I was making chocolate chip cookies, I realized I had no butter whatsoever in the house. I couldn’t believe it and slapped myself around a bit. And then went back to the chocolate chip cookie making business. I realized I had plenty of vegetable oil and where butter goes, oil can usually replace it (hey, just look at my pie crust recipe!).     When it comes to desserts, I pick chocolate over fruit any day. If I am somewhere where there are options, I will likely pick the most rich, decadent chocolate dessert I can (unless its 100 degrees, then I don’t want to eat anything… or move my body). So when it came time to decide how to use the big bag of oats I just bought, I thought oatmeal chocolate chip cookies sounded good. I have never made them. But then I started thinking about the chocolate part of the dessert, and I wanted more than just chocolate chips. I wanted a richer, more chocolatey dessert, but still using the oats.     I like writing numbered lists, especially in class. It makes me feel organized. Even if my list is scattered and all over the place. Let’s talk pizza, TV, and fudge brownies, shall we?

    1. Kyle picked up a pizza yesterday. A large delicious I-could-eat-you-everyday cheesy pizza. Inside the box was a small plastic container of Parmesan cheese and red pepper flakes. Kyle then tripped (though he may prefer if I say the box simply flew out of his hands) and the red pepper flakes burst open, and covered the pizza. The pizza looked like it had chicken pox! And I didn’t eat any of it. Why is this significant to me? This is the first time something has stopped me from eating delicious cheesy pizza.     This is just awesome. First I made simple vanilla cheesecake with a flaky chocolate crust. Who does that? I do. I used my favorite pie dough recipe except used a quarter cup cocoa powder in the recipe. It produced a rich chocolatey flaky crust that I plan on using more often. Then I made cheesecake , the same cheesecake recipe I used in that berry cheesecake pie. And then that was it, I felt guilty all ready. I figured I would top with sprinkles. I showed my sweetie. And then he said….

    I don’t even know what to say ya’ll. I was making chocolate chip brownie cups. I had a big box of  cocoa pebbles cereal on hand (the best cereal in my opinion) and decided to throw some in my brownie batter. And by some I mean a lot. I topped the brownies with cocoa pebbles too. Then I threw them in the oven and was anxious. Did I ruin a perfectly good batch of brownies? Or are these going to be the best brownies ever?

    I have been one busy bee lately. I am getting ready to go back to school and just made my class schedule. I am so excited, and so nervous at the same time. Being back on the campus made me remember all the homework I had, and haven’t had in the past two years since I graduated (unless you count this blog, which is totally home work). But the quicker I graduate, the quicker I can start my career and my life.

    If you are out of the loop, then let me quickly fill you in. Went to culinary school. Started cooking professionally. Started catering. Started blogging. Started to like photography.
