    Yes, another chocolate chip cookie recipe. As if the internet doesn’t have enough. When googling ‘Chocolate Chip Cookie’ there are 1,320,000 results. So how do you decide which recipe to make? Do you have a standard, never changing chocolate chip cookie recipe? Or do you like trying a new recipe every time? My chocolate chip cookie making ways differ. Usually, I prefer this recipe here. You melt the butter and let the sugar melt in it, which creates an absoluely perfect cookie… seriously.

    But this certain day that I was making chocolate chip cookies, I realized I had no butter whatsoever in the house. I couldn’t believe it and slapped myself around a bit. And then went back to the chocolate chip cookie making business. I realized I had plenty of vegetable oil and where butter goes, oil can usually replace it (hey, just look at my pie crust recipe!).     Just last month I made Killer Compost Cookies, and this week we have another kind of killer cookie! Reminder, if a recipe is killer then it is the best of my best. My creme de la creme. And this cookie is just amazing.

    I got the idea from chocolate snow cap cookies usually made around the holidays. Sometimes they are called crack cookies. The idea is to roll the dough in powdered sugar, and when the cookies bake and spread it creates cracks in the cookies. I love the chocolate espresso variation with the dark cocoa colored cookie and bright white powdered sugar, but I wanted something lighter.     I did something good. Actually, I did three good things.

    First, I cleaned out my pantry. Which I should do more often, it gets out of control and something always gets sticky. Second, I used all my random, small portions of baking ingredients that were taking up space. Less clutter in the cabinet means I get to buy more to fill it up! And lastly, I baked cookies.     When I was a kid, I had a problem. A candy, cookies, and sweets problem. Meaning, I ate too much of it. If there was candy in the house it was mine. If there was trail mix in the house, then I was going to pick all the M&Ms out of it and leave the nuts and raisins for everyone else. And if there were any oatmeal creme pies that were not hidden good enough for me not to find, then I was going to savor them.

    You can’t have one of these Triple Chocolate Cookies without a large glass of cold milk, and that is why these cookies bring such a big, silly grin to my face. No one ever gets grumpy when it comes to cookies and milk. Give someone cough syrup? Yuck. Prune Juice? No thank you. But freshly baked cookies and cold milk, now thats something everyone will smile at. Even Santa, which is probably why we leave him cookies and milk.

    When I grow up I want to be ______
    How did you used to fill in that blank? As a teenager I would often change my mind and my life goals. Because when you are in high school, you have it all figured out. At least you think you do. For a couple of years I thought I wanted to be an Air Force pilot. No really, I did. But then September 11th happened and everything changed. After that I thought that being a police officer would be pretty cool. I graduated high school and went to community college, still thinking I wanted to be a cop. I realized I needed to lose some weight to be able to run after criminals and I started to exercise and watched what I ate. Well, that then led to an interest in nutrition. Which made me change my mind yet again.

    Yup, I’m blogging on a Friday night. Remember when staying in on a Friday night made you a total nerd? There were a few years in high school when I felt like that, as if I needed to be out partying with other teenagers. It was sometime in my senior year that I accepted I was actually a nerd.
    No really, I was. A fantasy-fiction reading, non alcohol drinking, JROTC participating, full on nerd. As if High School isn’t hard enough, I volunteered to wear a military uniform to class. Dorkazoid!
    But you know what? Thank God! I’m glad I was nerd a good kid. I think it helped me become the woman I am today! I spent every night chowing on my Mom’s yummy cooking and now I cook in my kitchen every night. I spent my nights reading, and now I spend my nights writing. I also hang out with the same nerds!
