Honey Cheesecake - 150 px square

I am starting to develop some sort of cheesecake pie fetish. First there was the Berry Cheesecake Pie that I made for the 4th of July. I realized I could have cheesecake (that I love so much), without it being two inches high and heavy. I topped that pie with fresh strawberries and blueberries, and it really brightened the dish.It was a light, yet rich and satisfying dessert. Then I made the Candy Bar Cheesecake in a chocolate pie crust. Though this cheesecake pie was not topped with fresh fruit, instead with my favorite chocolate candy. Not so fresh, but damn good and damn sweet! So you could say I sort of have a thing for making a cheesecake in a pie crust, and adding stuff on top. Read More | Comments

    Candy - 150 px square

This is just awesome. First I made simple vanilla cheesecake with a flaky chocolate crust. Who does that? I do. I used my favorite pie dough recipe except used a quarter cup cocoa powder in the recipe. It produced a rich chocolatey flaky crust that I plan on using more often. Then I made cheesecake , the same cheesecake recipe I used in that berry cheesecake pie. And then that was it, I felt guilty all ready. I figured I would top with sprinkles. I showed my sweetie. And then he said….

“‘I want more chocolate… and it doesn’t look sweet enough.” Read More | Comments

    piepots - 150 px square

Bars… and pots! Wait, what? I thought of a great recipe the other night. I was to make Grammy’s Pie Dough and line a baking sheet with the dough, then pour a berry filling on top, and top with more pie dough. And then bake. And I did just that. And they were amaaazing. However I am always a scardey-cat when it comes to bars and fillings. My biggest fear is that I will use too much filling and the bars will not set in the middle, so I usually reserve some filling and set to the side. Well, I had the extra filling just sitting there on the counter, so I decided to add it to a few small ramekins lined with pie dough, and bake those as well. And at the end of the night I realized I created two desserts, from one recipe. pie - 150 px square

We are a little less than two weeks away from the 4th of July, one of my favorite holidays. On Memorial Day I went to one of my favorite streets that is lined with historic estates. I wanted to take pictures of the houses and their waving American flags. But I was disappointed to see only four, yes four, out of around 50 or so houses had flags displayed. So hopefully they change their tune and display one on the 4th!

This 4th of July I will be at the lake riding jet skis, and I am pretty sure a BBQ, beer and fireworks will be involved. At any family gathering it is pretty much assumed that I will be providing a dessert (which is awesome of course!) I thought of this recipe as I was thinking about a perfect summer pie, as well as a great 4th of July dessert. I wanted something light with seasonal fruit, but I didn’t want it to be too fruity. However I didn’t want it to be heavy at all. No one wants a rich, dense dessert when it is 100 degrees outside. Read More | Comments

    oatmeal - 150 px square

When I was a kid, I had a problem. A candy, cookies, and sweets problem. Meaning, I ate too much of it. If there was candy in the house it was mine. If there was trail mix in the house, then I was going to pick all the M&Ms out of it and leave the nuts and raisins for everyone else. And if there were any oatmeal creme pies that were not hidden good enough for me not to find, then I was going to savor them.

Part of me hates the constant sweet tooth. The more sugar you eat, the more you have to work out. And thats not an equation I like. However, when choosing a career they say to do what you love. Well, I love sweets. Always have, always will. Read More | Comments

    bananasplitpie

For the past few days I have had this feeling. This feeling that I am forgetting to do something important. I just knew I needed to do something, just couldn’t remember what it was!

Then it dawned on me yesterday, we are less than a week away from Christmas and I have not purchased one present. Yikes! I tried to go to a few stores yesterday but it was a mad house everywhere I went and I gave up. I told myself I would wake up early Sunday morning to get my Christmas shopping done. Well, Saturday night was my company Christmas party and lets just say I had too much fun to wake up early before noon. Read More | Comments

If I could, I would officially call this summer pie. Why can’t I? Because then you don’t know whats in it! Summer pie could mean a little something different to everyone.

To you, summer pie could mean classic apple pie….
    coconut cream pie….
    banana cream pie?

Now those sound good and all… but this is a Frozen Lemonade (with strawberry sauce) pie! Perfect on a hot summer day! Read More | Comments

    KeyLime-150 px square

20 key limes for 2$, joy!

I used to work in this restaurant and I made margarita pies daily (basically key lime pie filling but with plenty of sugar, tequila and triple sec added) so I got pretty quick at juicing key limes. But those 20 key limes I got at the store the other day took me about an hour to juice.

I would have stood there two hours if necessary, these are some good little pies! Read More | Comments
