    CHocolate Peanuts - 150

    These past two days have been awesome. Tuesdays are usually my long days with work all day and school all night, but we got a snow day! There was some ice, an inch (if that) of snow, but we Texans can not handle driving on any sort of snow, slush, ice, etc. So we freak out and close up shop. Fine with me ! Work was closed and school was cancelled, and last night was the coldest night DFW has seen in 15 years. So guess what? Everything is closed today too!

    Beans Burritos - 150

    I love burritos. My friends and coworkers love burritos. I live in Texas so everyone around me loves burritos. And since I live in Texas, you can practically buy a burrito on every corner.

    But here’s the problem. Those burritos are full of unnecessary calories, fat, sodium and cellulite. So I decided to make my own, and fill them with grilled vegetables and beans. I individually wrapped a few, so the past few days when I have been hungry for a light lunch or snack I can unwrap one, warm it up, and have myself a healthy burrito! Read More

    Dinner tonight was awesome. Dinner the past five nights has been awesome. Dinner the past five nights has basically been the same, and I can’t get enough! While trying to eat a bit better, I have made sure to keep a rainbow of vegetables in my fridge at all times, which is why this one simple meal contains garlic, red onions, sweet potatoes, broccoli, zucchini, spinach, mushrooms and green bell peppers. If this doesn’t meet your daily vegetable requirement, I don’t know what will!

    School starts again tomorrow, and I am having mixed feelings about going back. Of course I am excited about going back, and I am looking forward to learning more. I am taking an advanced lighting class as well as a portrait photography class (so you may see some head shots on here soon). On the other hand, I have a great routine going right now of walking the dog a few miles, working out, and cooking all of our meals from scratch. My waistline is benefiting from this new routine!     Yep, I am starting the new year off with a vegan recipe. It’s a new year, new you, and new me! (No I am not going vegan, but I am trying to be healthier, and healthy habits start with healthy snacking. No more vending machine!)     If you are like me, then you are tired of thinking about and seeing Thanksgiving recipes. I love the holidays but being a food blog and culinary magazine reader, I tend to get burned out on the sweet potatoes, the casseroles, the green beans, the turkeys, and the pumpkin pies. And then after Thanksgiving comes the leftovers recipes… but I like my leftovers plain and simple, heated up in the microwave (I say that with some shame).
